Turkey Tomato Alphabet Soup – Ontario Turkey

Ingredients

• 1 tbsp (15 mL) canola oil
• 2 carrots, chopped
• 1 onion, chopped
• 2 tsp (10 mL) Italian seasoning
• 1/2 tsp (2 mL) salt
• 1/4 tsp (1 mL) fresh ground pepper
• 1 can (28 oz/796 mL) diced tomatoes
• 4 cups (1 L) turkey or vegetable broth
• 4 cups (400 g) coleslaw mix or thinly sliced cabbage
• 2 cups (250 g) chopped cooked Ontario turkey
• 1/2 cup (50 g) alphabet pasta
