Angel Food Cake or Angel Cake, a no fat cake recipe

Ingredients

• 1 1/4 - 1 1/2 cups sugar
• 1 cup cake and pastry flour (sifted)
• 1/2 teaspoon salt
• 1 1/4 cups egg whites (10 - 12 egg whites)
• 2 tablespoons water ( or 1 tablespoon each water and lemon juice)
• 1 teaspoon cream of tartar
• 1/2 teaspoon vanilla
• 1/2 teaspoon almond extract
