Ingredients

• 2 tbsp olive oil
• 1 onion (, chopped)
• 2 cloves garlic (, finely chopped)
• 1 tbsp chopped fresh ginger
• 1 tsp ground cumin
• 1/2 tsp ground cinnamon
• 6 tomatoes (, diced)
• 2 cups chicken or vegetable stock
• 2 tbsp honey
• 2 tbsp lemon juice
• 2 tbsp sweet Thai chili sauce ((optional))
• Salt to taste
