Spicy Tomato Soup

Ingredients

• 1 tbsp olive oil
• 1 onion (chopped), 2 garlic cloves (minced)
• 1 thumb-sized ginger, minced
• 2 large tomatoes, chopped
• 2 tbsp Troovy’s Tomato sauce
• 1 large carrot, chopped
• 1 cup spinach
• 1 cup cooked lentils
• 1 tsp turmeric
• 1 tsp cumin
• 1 tsp coriander powder
• 1/2 tsp chili powder
• 4 cups vegetable broth
• Salt and pepper
• Juice of 1 lemon
