RUSTIC POTATO AND LEEK SOUP - Good Eatings

Ingredients

• 1 1/2 leek
• 1 red onion
• 4 garlic cloves
• 1/2 cup red lentils
• 12 medium potatoes
• 3 tbsp olive oil
• 1 1/4 – 1 1/2 l water
• 1 tbsp vegetable stock powder or equivalent in cube
• 1/2 tsp garlic powder
• 1 tsp smoked paprika powder
• Salt and pepper to taste
• A handful of parsley, for serving
