• Salt
• ¹⁄₄ cup butter
• Freshly ground black pepper
• Tabasco
• 8 fresh pork sausages (about 2 lbs.), pricked all over with a fork
• 2 ribs celery, finely chopped
• 1 large yellow onion, finely chopped
• ¹⁄₂ green bell pepper, cored, seeded, and finely chopped
