• 6 large poblano peppers
• 1 tbsp olive oil
• 1/2 onion, diced
• 1 clove garlic, crushed
• 1 tsp chili powder
• 1/2 tsp cumin
• 1/2 tsp dried cilantro
• 1/2 tsp paprika
• 1 tsp salt
• 1 can diced tomatoes, 14.5 oz
• 1/2 lime, juice of about 1 tbsp
• 1/2 cup sour cream (I recommend full fat)
• 1 cup cooked rice
• 1 cup frozen corn
• 2 cups shredded chicken (about 1 rotisserie chicken)
• 2 cups Monterey jack cheese, shredded
