• ¼ cup olive oil
• 1 small yellow onion, chopped
• 1 green bell pepper, seeded and chopped
• 5 cloves garlic, crushed then sliced
• 1 teaspoon whole cumin seeds, ground
• 1 tablespoon paprika
• 1 (28-ounce) can San Marzano whole tomatoes
• 1 ½ tablespoons harissa
• ½ cup water
• Sea salt, to taste
• 8 eggs
• ½ cup crumbled feta cheese
• 1 tablespoon chopped flat-leaf parsley
