• 115g unsalted butter, cold, cut into small pieces

• 240ml heavy cream
• 1 tsp pure vanilla extract
• 2 tbsp powdered sugar
• 4 large freestone peaches, firm but ripe, cut in half lengthwise, pits removed
• 42g light brown sugar
