Butternut Squash and Pineapple Bread Pudding - The Local Palate

Ingredients

• 3 cups Niedlov’s Breadworks sourdough loaf, crusts removed, diced large (or sourdough bread of choice)
• Canola oil
• ½ cup butternut squash, diced large
• ½ cup pineapple, diced large
• 1½ cups brown sugar
• 5 large eggs, beaten
• 2 cups half-and-half
• 1 tablespoon cinnamon
• 1 teaspoon nutmeg
• 2 teaspoons vanilla extract
