Thomasina Miers' Pork Pibil Tacos - James Martin Chef
Thomasina Miers' Pork Pibil Tacos is an amazing street food dish. The pork is marinaded overnight for maximum flavour and then cooked slowly.
Ingredients
- 1 teaspoon allspice berries
- 2 teaspoons freshly ground cumin seeds
- ½ teaspoon cloves
- 1 teaspoon peppercorns
- 100g achiote paste
- 3 tablespoons cider vinegar
- 1 medium onion, peeled and coarsely chopped
- 3 fat garlic cloves, peeled and coarsely chopped
- a large bunch fresh oregano or 1 teaspoon dried oregano
- 3 fresh bay leaves
- 2 tablespoons sea salt
- 3 tablespoons olive oil
- juice of 6 oranges (about 450ml)
- 2kg neck of pork
- ½ habanero or Scotch bonnet chilli, de-seeded and finely chopped
- 40g butter
- 1 large red onion or two medium sized ones sliced quite thinly
- A small amount of fresh habanero chilli very finely chopped
- Zest and juice of 2 limes
- Zest and juice of 1 orange
- Salt and pepper to season
- Refried beans
