  • Tomato – 2 large, roasted
  • Gulash de pepián (or specific Guatemalan spice blend) – 2 tablespoons
  • Cilantro – 1 cup, fresh leaves
  • Scallions – 1 bunch, chopped
  • Chili Pepper – 1 or 2, to taste, roasted
  • Onion – 1 large, chopped
  • Epazote – A few sprigs for its unique anise flavor
  • Seasoned salt – to taste
  • Water – sufficient for covering meat and vegetables
  • Rice – for serving
  • Club soda – optional, for a sparkling drink accompaniment
