Crispy Roast Chicken

Ingredients

• Marinade:
• 2 tablespoons grainy Dijon mustard
• 1/4 cup balsamic vinegar
• 2 tablespoons soy sauce
• 3 garlic cloves, minced
• 1/4 teaspoon black pepper
• One 3 1/2 to 4 1/2 pound fryer chicken, cleaned and patted dry
• 1 onion, sliced
• 2 carrots, peeled and thinly sliced
• 2 cups chicken broth
