  • 2 cups low-sodium chicken broth
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 8 ounces carrots, peeled and cut into 1 1/2-inch pieces
  • 3 Yukon Gold potatoes, peeled and cut into 1 1/2-inch pieces
