Ingredients

• 2 tsp sugar
• 1 tsp Basil
• 450 g (1 lb) cod fillet, skin on is best
• Schwartz Sea Salt and Black Pepper to season
• Parsley to garnish
• 1 tbsp olive oil
• 1 onion, chopped
• 2 tsp Garlic Granules
• 150 ml (¼ pint) white wine
• 400 g tin chopped tomatoes
• 200 ml (7 fl oz) chicken stock
• 50 g (2 oz) green olives, pitted
• pinch Saffron
• 2 tbsp Paprika
• ½ tsp Chillies Crushed
• 1 red pepper, chopped
