Ingredients

• 6 tbsp oil
• 1 medium russet potatoes, peeled and diced
• 1 medium celery, peeled and diced
• 1 medium yellow onion, diced
• 1 medium clove minced garlic
• 1 tbsp thyme, fresh
• 3 tbsp unsalted butter
• 1 lb corned beef, fully cooked
• 1 cup reserved corned beef jus
• 1 tbsp parsley, fresh flat leaf, chopped
• 1 tbsp chives, fresh, thinly sliced
• Kosher salt and freshly ground black pepper
