Localvore Beef Stew - Middlebury Food Co-op

Ingredients

• 2 T sunflower or canola oil
• 1 pkg Tail Feather Farm stew beef
• 1 large onion, chopped
• 1 celeriac bulb, peeled & chopped
• 3 cloves garlic, minced
• 3 large carrots, peeled & chopped
• splash of dark beer
• 2 quarts water or broth
• 4 small red potatoes, quartered
• 6 leaves kale, chopped
• 4 tomatoes, quartered
• 2 T fresh rosemary, minced
• 1 bay leaf
• salt & pepper, to taste
