Localvore Beef Stew - Middlebury Food Co-op

Ingredients

• 1 large onion, roughly chopped
• 1 bulb celeriac, peeled & chopped
• 3 cloves garlic, minced
• 3 large carrots, peeled and chopped
• 4 small red potatoes, chopped
• 6 leaves kale, stems removed, chopped
• 4 tomatoes, quartered
• 2 T sunflower or canola oil
• 1 pkg North Hollow Farm stew beef
• splash of Otter Creek Couch Surfer or other dark beer
• 2 quarts of broth or water
• 2 T fresh rosemary, roughly chopped
• 1 bay leaf
• salt & pepper, to taste
