Leek Croquettes
Leek croquettes, inspired by Sephardic cuisine, are perfect Passover treats. Wash, cook, form into patties, dip in matza meal, fry golden, and serve with lemon juice. A family favorite at the Seder!
Ingredients
- 12 large leeks
- 3 matzoth or 4 slices of bread (if not Passover)
- 3 eggs
- 1 tsp. salt
- 1/4 to 1/2 tsp. pepper
- matza meal
- olive oil for frying
- juice of 2-3 lemons (about 4-6 T.)
