Ingredients

• 4 chicken fillets, bone-in and skin-on
• Salt and black pepper
• 1 tbsp olive oil
• 120 g pancetta, chopped
• 3 garlic cloves, crushed
• 1 pinch of dried chilli flakes, (optional)
• 800 g tinned whole plum tomatoes
• 1 handful of basil, chopped, plus extra to serve
• 250 g fresh mozzarella, torn
