Ingredients

• 6 ounces thick-cut bacon, 6 slices coarsely chopped
• 1/2 cup onion, diced

• 1 pound french green lentils, rinsed, drained
• 1/4 cup fresh parsley,minced
• 1/2 teaspoons thyme
• 1/2 cup olive oil
• 1/4 cup red wine vinegar
• 3 tablespoons dijon mustard
• 1/2 cup red onions,chopped
• 1/2 cup celery,chopped
• 1/4 cup walnuts,chopped
