Pineapple Pulled Pork Al Pastor Recipe

- 9 pounds bone-in pork shoulder roast
- 1 cup kosher salt
- 1 quart pineapple juice
- 3 quarts cold water
- 2 tablespoons kosher salt
- 0.25 cup ancho chili powder
- 1 tablespoon ground chipotle pepper
- 1 tablespoon garlic powder
- 1 tablespoon ground cumin
- 2 teaspoons ground cinnamon
- 1 tablespoon dried Mexican oregano
- 0.5 pineapple, cut into rings, or to taste
- 1 serrano pepper, finely chopped
- 2 tablespoons diced roasted red peppers
- 0.25 cup chopped cilantro
- 0.25 cup rice vinegar
