• 150 g Courgette cut into small cube
• 130 g Cherry tomatoes cut in half
• 100 g Butter beans tinned drained weight
• 1 Onions med chopped
• 70 g Raw cashews, soaked overnight
• 70 ml Almond, soy or coconut milk
• 30 g Fresh basil leaves chopped
• 3 tbsp Olive oil
• 1 Vegetable stock cube or gel pot
• 1 Lemon zest only
• 1 Garlic clove finely grated
