  • 1/2 lb. Lumache (dry about 2 cups) sub with rigatoni
  • 1 lb. Fresh shrimp (preferably with head on)
  • 1 bulb Fennel (sliced in half)
  • 2 stalks Celery
  • 2 Shallots course dice
  • 1 sprig Thyme
  • 1 sprig Tarragon
  • 1 Bay leaf
  • 1 quart Water
  • 1 quart Clam juice (4 bottles)
  • 4 oz. Chardonnay
  • To taste Salt
  • 2 Tbsp EVOO
  • 1/4 cup Peppers hot Italian pickled
  • 2 Tbsp Tomato paste
  • 3 Tbsp Butter
  • Zest Lemon (one)
  • Juice Lemon (1/2)
  • 1 sprig Basil
  • 2 Tbsp Bottarga grated (jar)
