Japanese Carrot Ginger Dressing (Restaurant-Style)
A vibrant, tangy, and slightly sweet salad dressing made with fresh carrots, ginger, and miso. Better than the steakhouse version! Ready in 10 minutes.

- 2 medium carrots, peeled and roughly chopped (~¾ cup)
- 1 tablespoon fresh ginger, peeled and grated
- 1 small shallot, roughly chopped
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce (low-sodium works well)
- 1 tablespoon honey
- 1 teaspoon toasted sesame oil
- 3 tablespoons neutral oil (avocado, grapeseed, or vegetable)
- 1 tablespoon water (to thin, if needed)
- Salt and white pepper, to taste
