Creamy Pressure Cooker Two-Potato Seafood Chowder - Choose Canadian Seafood

- 250 g (approximately 8 oz) Canadian rockfish, redfish, or halibut, cut into bite-size chunks
- 8 to 10 (250 g) medium-sized shucked raw Canadian oysters
- 2 tbsp (30 g) butter
- 1 onion, chopped
- 1 stalk celery, chopped
- 3 cloves garlic, minced
- ¼ tsp (1 g) each salt and pepper
- 4 cups (1 L) homogenized (3.5%) milk
- 1 bottle (236 mL) clam juice
- ½ cup (125 mL) dry white wine
- 2 russet potatoes, peeled and diced (about 2 cups / 300 g)
- 1 large sweet potato, peeled and diced (about 2 cups / 300 g)
- 3 sprigs fresh thyme
- 3 tbsp (24 g) cornstarch
- 1 tbsp (15 mL) lemon juice
- 2 tbsp (6 g) chopped fresh chives
