Mediterranean Bowl with Fresh Tzatziki

Ingredients

• 1 garlic clove, finely chopped
• 1 teaspoon dried thyme leaves
• 1 teaspoon oregano (dried)
• 3 tablespoons olive oil
• 1 tablespoon squeezed lemon juice
• ½ teaspoon table salt
• ¼ teaspoon ground black pepper
• 1 pound sirloin, cut about 1 inch thick
• A cup of roasted chickpeas
• 2 cups of pre-cooked grains (quinoa, brown rice, or cauliflower rice)
• Half of a thinly sliced red onion
• A handful of cherry tomatoes, halved
• ⅓ cup crumbled feta cheese
• ¼ cup chopped dill or parsley (use what you've got)
• 1 cucumber, diced up
• Half a cup of pitted kalamata olives
• A pinch of salt and pepper (to your taste)
• 1 grated cucumber, squeeze to remove water
• 1 cup of plain Greek yogurt
• 1 tablespoon fresh lemon juice
• 1 clove of garlic, minced finely
• 1 tablespoon of freshly chopped dill
• A teaspoon of dried oregano
• A pinch of salt and ground black pepper
• 2 tablespoons lemon juice (freshly squeezed)
• 3 tablespoons of olive oil
• 1 garlic clove, minced small
• 1 teaspoon honey (optional)
