Beet Chips with Creamy Goat Cheese Dip | Woolwich Dairy

Ingredients

• 4 medium-sized beets, trimmed and cleaned
• Cooking spray
• 5 mL (1 tsp) dried Herbes de Provence or dried oregano
• 2 mL (1/2 tsp) sea salt
• Freshly ground black pepper
• 300 g Woolwich Dairy Original Goat Cheese log
• 30 mL (2 tbsp) minced fresh herbs (basil, oregano, Italian parsley)
• 15 mL (1 tbsp) freshly squeezed lemon juice
• 5 mL (1 tsp) finely grated lemon zest
• 5 mL (1 tsp) honey
• 1 small clove garlic, chopped
• Extra-virgin olive oil and chopped toasted almonds, to serve (optional)
