• 2 slices thick-cut bacon, chopped
• 1 small shallot, chopped, or about 1/3 cup
• 1 cup all-purpose flour
• 1 /2 cup whole spelt or whole wheat flour
• 2 teaspoons baking powder

• A few grinds of black pepper
• 1 cup shredded Parmesan cheese (freshly shredded is best)
• 3 large eggs
• 1/2 cup whole milk
• 1/4 cup extra-virgin olive oil
• 3/4 cup pitted green olives, sliced or chopped
• 1/4 cup finely chopped sun-dried tomatoes
• 1 tablespoon sesame seeds (optional)
