For as much as I absolutely love great pesto, I'm always looking for a way to do it differently. This sundried tomato version from Central isn't just great on pasta, it also works well on sandwiches...
Ingredients
- 4 ounces sun-dried tomatoes
- 2 tbsp chopped fresh basil
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped garlic
- 1/4 cup chopped pine nuts
- 3 tbsp chopped onion
- 1/4 cup balsamic vinegar
- 1 tbsp tomato paste
- 1/3 cup crushed tomatoes
- 1/4 cup red wine
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese
