Ingredients

• 1 cup (250 ml) milk
• 1 tbsp (15 ml) lemon juice
• 1 cup (150 g) unbleached all-purpose flour
• 1/2 cup (50 g) cocoa powder, sifted
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 2 eggs, at room temperature
• 1 cup (210 g) sugar
• 1/4 cup (60 ml) vegetable oil
• 1/4 cup (60 ml) hot coffee or boiling water
• 13 oz (370 g) dark chocolate (between 55% and 65%), chopped
• 1 cup (250 ml) 35% cream
• 2 tbsp (30 ml) honey (see note)
• 1/4 cup (55 g) unsalted butter
• 1/2 cup (125 ml) water
• 3 tbsp sugar
• 1 tbsp cocoa powder
