• 1 small onion, finely diced
• 1½ tbsp sage, chopped, plus 5 whole leaves, to garnish
• ½ (about 250g) sourdough bloomer, thickly sliced
• 2 medium eggs, lightly beaten
• 2 small cox apples, coarsely grated
