Tuna Puttanesca + Side Salad - Student Recipes

Ingredients

• SAUCE:
• -1 tin of chopped tomatoes
• -1 tin of tuna (in brine)
• -6 mushrooms (diced)
• -1 teaspoon of capers (drained)
• -8-12 black olives (stoned and chopped)
• -6 cherry tomatoes (halved)
• -2 cloves of garlic (finely chopped)
• -Chili flakes
• -Mixed herbs
• -Tomato pureé
• -Olive oil
• -Salt + Pepper
• PASTA:
• -2 large handfuls of penne pasta
• -Salt
• TOPPINGS:
• -Curly or Flat Parsley (roughly chopped)
• -1 fresh lemon (halved)
• -Plenty of grated cheddar!
• [OPTIONAL] SIDE SALAD
• -1/2 a mixed salad bag (rocket, watercress, baby spinach are the best for this!)
• -1/2 a fresh lemon
