Ingredients

• 4 1/3 cup (607 g) 00 flour or all-purpose flour (ideally one with higher gluten content such as King Arthur), plus more as needed for kneading and shaping
• 1 2/3 cup (364 g) lukewarm water
• 4 teaspoons (18 g) salt
• 2 1/4 teaspoons (7 g) active dry or instant yeast
• 1/4 cup olive oil
• 2 cups Salsa Verde
• 2 cups fresh goat cheese
• About 1 cup cooked, crumbled bacon
• About 3/4 cup grated Mexican queso añejo or other garnishing cheese like Parmesan or Romano
• A big handful cilantro leaves
