Ingredients

• 1/2 piece of fresh ginger, peeled and cut into chunks
• 1 green onion, cut into pieces
• 1 cup (250 ml) packed fresh cilantro
• 3/4 cup (175 ml) unsweetened coconut milk
• 1/4 cups (60 ml) stubbs chili lime ginger pork marinade
• 5 tbsps (75 ml) packed dark brown sugar
• 1 tbsp (15 ml) soy sauce
• 1/2 tsp (2 ml) salt
• 3 pounds (1.5 kg) boneless skinless chicken thighs
