Ingredients

• 60 ml olive oil
• 1 onion, thinly sliced
• Sprig fresh rosemary, roughly cut
• 1 clove garlic, sliced thinly
• 3 lamb sausages, meat removed from skins (small meatball size)
• 1 cup passata (or fresh tomatoes roughly chopped)
• ½ cup freshly chopped flat leaf parsley
• 1 Tbsp red wine vinegar, or to taste
• 400g dried Pasta d’Oro Penne or Rigatoni
