Midori Melon Cupcakes & Frosting | The Ninja Baker
Midori Melon cupcakes and frosting are festive and fluffy light. The buttercream recipe on the back of the C&H powdered sugar box provided the inspiration for the Midori Melon frosting.
Ingredients
- 1 package white cake mix
- 2 tablespoons coconut flour
- ¾ cup sweetened shredded coconut flakes plus about ¼ cup for garnish
- 1 cup Midori Melon liquor
- 3 tablespoons chocolate sauce
- 1 box (16 ounces) powdered sugar
- 1 teaspoon vanilla extract
- ½ cup softened unsalted butter
- ¼ cup plus 1 tablespoon Midori Melon liquor
