  • 1 cup Pearl (Israeli-style) couscous
  • 1 small zucchini, cut into 1/2" cubes
  • 1/2 red or yellow bell pepper, cut into 1/2" cubes
  • 1 lemon, juiced (~1 Tbsp)
  • 1 Tbsp olive oil
  • 2 Tbsp Italian parsley for garnish, chopped
  • Lemon Chive Yogurt:
  • 1/2 cup plain greek yogurt
  • 1/2 lemon, zest + juice
  • 1 small garlic clove, minced
  • 2 Tbsp of chives, diced
