Ingredients

• 1/2 tsp each salt and baking soda
• 2 tsp ground ginger
• 2 tsp ground cinnamon
• 1/2 tsp ground cardamom (optional, but I use it every time)
• 1/2 tsp ground cloves
• 3 1/4 cup flour (I use unbleached)
• 3/4 cup butter (1 1/2 stick butter), softened
• 3/4 cup sugar
• 3/4 cup unsulfured molasses
• 1/4 cup water
