• 2 egg replacers (I use Ener G)
• salt and pepper, to taste
• 1/4 cup Italian breadcrumbs
• 3 tablespoons olive oil, divided
• 8 cups vegetable broth
• 1 cup spinach, chopped
• 1/2 cup couscous
• 1/2 cup white wine
