- 2 tbsp vegetable oil
- 2 onions , roughly chopped
- 2 celery sticks , roughly chopped
- 2 medium carrots , roughly chopped
- 1 whole garlic bulb , cut in half widthways
- 4 rosemary sprigs
- 600ml chicken stock
- 2kg Maris Piper potatoes , peeled and cut into 5cm chunks
- 75ml vegetable oil
- 400g smoked bacon lardons
- 2 rosemary sprigs , leaves picked and finely chopped
