• 3/4 lb (300 g) Toulouse sausage meat (about 3 sausages)
• 4 cloves garlic, finely chopped
• Grated zest of 1 orange
• Salt and pepper
• 4 orange slices
• 1 15 lb (7 kg) turkey
• Cheesecloth
• 1/2 orange
• 4 celery stalks, chopped
• 3 onions, cut into pieces
• 4 carrots, cut into pieces
• 3 cinnamon sticks
• 3 cloves
• 2 tablespoons (30 ml) salted butter, softened
