• 4 Yukon Gold Potatoes
• 2 tablespoons olive oil plus 1/3 cup olive oil
• Kosher salt and ground black pepper
• 1/2 cup packed snipped chives
• 1/2 cup packed parsley leaves
• 2 tablespoons toasted pine nuts
• 2 cloves garlic
• 1 tablespoon lemon juice
• 1/4 cup (or more!) sour cream
