Ingredients: 1 pound dry pasta (we used a curly macaroni type of pasta); 1 1/2 pounds zucchini (and/or summer squash, we used 2 summer squash and 2 zucchini, cut lengthwise and then cut crosswise into 1/2 inch slices); kosher salt; pepper; 4 tablespoons olive oil; 2 garlic cloves, sliced; 1/2 teaspoon red pepper flakes; 1 lemon, juiced and zest; 1/2 cup Parmesan cheese (or your favorite cheese), grated; 1 1/2 cup herbs, chopped (I used oregano but what ever you have on hand is probably good such as basil or mint)
