Shito is an extremely popular Ghanaian condiment that adds so much flavour to any dish it is paired with. It is a savoury, umami and spicy.
Ingredients
- 1 cup dry smoked crayfish or shrimp
- 3 whole medium-sized dry Smoked Herring, preferably unsalted
- 2 very large onions, peeled and largely chopped
- ½ head garlic, peeled
- ½ cup ginger, chopped
- 7 small scotch bonnets, stems removed
- 4 cups vegetable oil, canola oil or sunflower oil, plus more as needed
- 1 tube (130 g) tomato paste
- 2 tsp anise seeds
- 1 Tbsp paprika
- 3 tsp allspice powder
- 1 heaping Tbsp dried thyme
- 1-2 shrimp bouillion cubes, or to taste, optional
- 1 Tbsp red pepper flakes, optional
