Ingredients

  • 10 Cox’s Orange Pippin apples, or braeburn apples
  • 50g of butter, melted
  • 5g of pectin, (optional)
  • 250g of elderberries
  • 100ml of water
  • 25g of liquid glucose
  • 75g of golden caster sugar
  • 2g of Super neutrose, (stabiliser)
  • 1/2 gelatine leaf, soaked in cold water to bloom
  • 10ml of lemon juice
  • 100g of cobnut, roasted and skinned
  • 100ml of milk
  • 150g of whipping cream
  • 3 egg yolks, (from large eggs)
  • 50g of golden caster sugar
  • 10g of cornflour
  • 40g of blackberries
  • 1 tbsp of water
  • 100g of plain flour
  • 30g of muscovado sugar
  • 40g of cobnuts, skinned and chopped
  • 20g of jumbo porridge oats
  • 1 pinch of ground cinnamon
  • 80g of butter
  • sorrel leaves
