• 1 lb. Phillips Lobster Meat, divided
• 1 cup ricotta cheese
• 1/2 cup freshly shredded Parmesan cheese, plus more for garnish
• 1 lemon, zested
• 2 Tbsp. freshly chopped thyme
• 1 Tbsp. garlic powder
• salt, to taste
• pepper, to taste
• 4 large eggs (room temperature)
• 2.5 cups plus 1 Tbsp. “00” flour (finely ground pizza/pasta flour)
• 1/3 cup + 1 Tbsp. all-purpose flour
• 1 tsp. salt
• 1/2 stick butter
