Avocado Chicken Enchiladas Recipe

Ingredients

• 1 Tablespoon Butter
• 3 garlic cloves (minced)
• 1 Tablespoon flour
• 1 cup chicken stock ((you could use vegetable stock))
• 2 teaspoon cumin
• ¼ teaspoon salt
• ¼ teaspoon fresh ground pepper
• ½ cup chopped cilantro
• 1 cup mild or medium salsa verde ((depending on how hot you want it))
• ½ cup fat free sour cream
• 4 cups cooked chicken breast (chopped or shredded)
• 2 cups shredded Mexican blend cheese
• 3 avocado (peeled and chopped)
• 8 flour tortillas
