Vietnamese Chicken Salad

Ingredients

• 1/3 c lime juice plus wedges for garnish
• 3 1/2 tbsp fish sauce
• 1 1/2 tsp sugar
• 1 small red onion sliced thinly
• 4 cups (14 oz) red or green cabbage shredded
• 4 med carrots peeled and shredded on box grater
• 3 jalapeños seeded and sliced very thin
• 1 c lightly packed basil leaves, torn
• 1 c lightly packed cilantro roughly chopped
• 1 1/2 c peanuts roughly chopped
• 2 med garlic cloves, grated finely
• 3 cups cooked chicken, shredded, can also use duck
