• 1 1/2 tsp salt
• 1 bay leaf
• 2 tbsp extra virgin olive oil, plus more
• 1 onion, cut into 1/2-inch dice
• 1 large carrot, cut into 1/4-inch dice
• 1 celery rib, cut into 1/4-inch dice
• 1 garlic clove, mashed
• 1 tbsp tomato paste
• 2/3 cup dry red or white wine
• 2 tsp Dijon mustard
• 2 tbsp butter
